Portuguese Chicken Stir Fry

Serves: 4
Portuguese Chicken Stir Fry Ingredients:
3 Chicken breasts, sliced
1Tblsp Olive oil
1 tsp Nando's PERi PERi Essence
1 Lime, zested & juiced
1 Tblsp Oil
500g Stir fry vegetables (capsicum, spring onion, brocolini, oyster, mushrooms etc)
200g Crispy noodles
Lime wedges to garnish and Nandos PERi PERi Essence to taste.

Method:
  1. Combine oil, chicken , Nando's PERi PERi Essence and lime zest and juice in a small bowl and mix well.
  2. Heat wok or large frying pan over a high heat and stir-fry chicken until well browned.
  3. Remove from pan and heat oil 1-minute stir fry vegetables 2 minutes, return chicken to the pan and cook stirring 2 minutes.
  4. Divide crispy noodles between individual serving bowls and top with PERi PERi chicken stir-fry.
  5. Garnish with PERi PERi Essence for extra spiciness and a wedge of lime.

Chorizo and Peri Chicken Risotto or (Pilaf)

Chorizo and Peri Chicken Risotto or (Pilaf) Ingredients:
1 Tblsp Oil
300g Chicken thigh, diced
2 Smoked chorizo sausage, sliced
1 tsp Garlic, crushed
1 Leek, sliced
3 cups Arborio rice
3 cups Chicken stock, hot
2 tsp Nandos PERi PERi Essence
100g Spinach leaves, washed
3 Ripe tomatoes, seeded and diced
1/2 cup Parmesan cheese
PERi PERi Essence to taste

Method:
  1. Heat oil over a medium heat in a large paella pan or deep 28cm frying pan. Brown chicken and chorizo well. Remove and set aside.
  2. Saute the sliced leek and garlic 2 minutes over a medium heat.
  3. Add rice to the pan and toast 2-3 minutes stirring occasionally.
  4. Gradually stir in the hot chicken stock 1-cup at a time until all the stock is absorbed, stir in the Nando's PERi PERi Essence. (You may need to add a little more stock until rice is Aldent'e and soft to the tooth.
  5. Stir through the chicken and chorizo, diced tomatoes and parmesan cheese heat through

Peri Lemon Chicken Pesto Pasta

Peri Lemon Chicken Pesto Pasta Ingredients:
400g Fettuccine or Tagliatelle pasta
2 Chicken breast, skin off
1 Lemon Zested & juiced
1 tsp PERi-PERi Essence
2 Tblsp Olive oil
1 Red capsicum roasted, sliced
Pesto
1 cup Basil leaves
2 Lemons zested
1 tsp Nando's PERi-PERi Essence
2 Tblsp Lemon pressed olive oil
10 Fresh baby Bocconcini cheese
Sliced lemon to serve
PERi-PERi Essence to taste

Method:
  1. Cook pasta as per pack instructions.
  2. Slice chicken thinly.
  3. In a medium bowl combine the lemon juice and zest, Nando's PERi-PERi Essence and oil, mix well. Marinate chicken for 20 minutes.
  4. Place basil leaves, lemon zest, Nando's PERi-PERi Essence and lemon oil into the work bowl of a food processor and blend to form a paste.
  5. Heat a non-stick frying pan over a medium heat and cook chicken 4-5 minutes.
  6. Drain pasta well and toss through the pesto paste, chicken, bocconcini, and capsicum. Season to taste with a little extra Nando's PERi-PERi Essence.

Peri Peri Slow Cooked Beef

Peri Peri Slow Cooked Beef Ingredients:
2kg Beef, cubed
1 tsp Nando's PERi-PERi Essence
1/2 cup Plain flour
2 Tblsp Olive oil
2 Onions, sliced
1 Red capsicum, diced
800g Can Tomatoes, diced
1 Green chilli, finely chopped
1 cup Beef stock
Nando's PERi-PERi Essence to taste
To Serve
Crusty bread
Sour cream
Coriander leaves to garnish

Method:
  1. Toss beef cubes with Nando's PERi-PERi Essence.
  2. Place the flour into a plastic freezer bag add the beef and shake well to coat.
  3. Heat half the oil in a large frying pan over medium heat and brown the beef cubes well, a few at a time. Remove and set aside.
  4. Brown the onions 2 -3 minutes; add the capsicum, tomatoes and green chilli to the pan, cook stirring for 2 minutes.
  5. Return the beef to the pan, stir in the stock and Nando's PERi-PERi Essence. Bring to boil.
  6. Transfer contents to an ovenproof dish, cover and cook in the pre-heated oven for 2 hours until beef is tender.
  7. Season to taste with a little extra PERi-PERi Essence. Serve with white bean mash and green beans. Garnish with sour cream

BBQ Peri Peri Lamb Kebabs with Spicy Hummus Dip

BBQ Peri Peri Lamb Kebabs with Spicy Hummus Dip Ingredients:
8 Lamb leg steaks
2 Tblsp Oil
1/4 Cup Honey
2 Limes zested & juiced
2 tsp Nando's PERi-PERi Essence
1/4 cup Parsley, chopped
2 Cloves, garlic, finely chopped
To serve
Flat bread
Tabouli salad
Hommus
Nando's PERi-PERi Essence to taste.

Method:
  1. Cut lamb steaks in half.
  2. Combine oil, honey, lime juice and zest with the Nando's PERi-PERi Essence, parsley and garlic in a shallow bowl and mix well.
  3. Place the lamb into the marinade and refrigerate for several hours or overnight, turning frequently.
  4. Thread lamb steak and cherry tomatoes on large skewers.
  5. Grill or BBQ skewers 4-5 minutes each side, basting frequently with marinade.
  6. Serve hot on warm flat bread with tabouleh salad and garnish with hommus dip spiced with Nando's PERi-PERi Essence to taste.

Peri Pizza 3 Variants – Vege, Chicken, Meat Lovers Ingredients:
Pizza base
3 cups Bread flour
2 tsp Dried yeast
1 tsp Nando's PERi-PERi Essence
2 Tblsp Olive oil
1/2 tsp Salt
approx 1 cup Lukewarm water to mix
Pizza sauce
400g can Diced tomatoes
1 Tblsp Olive oil
1 clove Garlic crushed
1/2 tsp Sugar, Salt & black pepper to taste
Meat Lovers Topping
1 cup Pizza Sauce, Salami, chorizo, roast chicken
Basil leaves
Mozzarella cheese
Olives
Capsicum
Nando's PERi-PERi Essence to taste.

Method:
  1. Pre-heat oven 220c
  2. Combine flour, yeast and salt in a large bowl and mix well.
  3. Make a well in the centre and add the oil and Nando's PERi-PERi Essence along with enough water to mix to a soft tacky dough.
  4. Remove dough from bowl, wash and oil lightly. Replace dough cover with plastic wrap and allow to rest in a warm place until dough has doubled in size.
  5. Place the diced tomatoes, olive oil, garlic and sugar in a medium frying pan and bring to the boil over high heat. Boil, uncovered, for 8-10 minutes or until the sauce is thick. Season well with salt & pepper.
  6. Place dough on a lightly floured surface and knead well. Divide dough evenly in two. Roll out dough evenly 2cm thick. Place dough onto a large baking tray and spread with pizza sauce, top with toppings.
  7. Bake in the pre-heated oven 20-25 minutes, serve hot, garnish and add a little extra PERi-PERi Essence.
